In the summer of 1802, guests at Thomas Jefferson’s table were served something almost nobody in Virginia had access to: ice cream, in July, in a state with no electricity and 95-degree heat. The refrigerator wouldn’t be patented for another twenty years. So how did a house on a Virginia mountaintop keep dessert frozen through the hottest month of the year?
The short answer is that Jefferson’s household ran an entire preservation system — ice, salt, smoke, sugar, and fermentation working together — and that system was designed, built, and operated almost entirely by people Jefferson enslaved.
The ice house. Jefferson personally sketched the dimensions of Monticello’s ice house: a brick-lined pit 16 feet deep, dug into the north side of the mountain where direct sun never reached it. Every winter, enslaved workers hauled ice up from the Rivanna River — in a good year, 37 wagon loads — and packed it in straw and sawdust. Handled carefully, it lasted into October. Ice houses themselves were nothing new (Persian yakhchāls date to 400 BCE), but what Jefferson had wasn’t a new invention. It was access — specifically, access to unpaid labor.
The smokehouse. For everyday preservation, plantations relied on salt and smoke. Hogs were slaughtered in late fall, packed for six weeks in coarse mineral salt to draw out moisture, then hung in a windowless smokehouse over a low, smoldering hickory or oak fire — hot enough to coat the meat in preservative creosote, never hot enough to cook it. Every step of this — butchering, salting, tending the fire for weeks — was skilled work performed by enslaved cooks and laborers, many drawing on African and Indigenous preservation techniques adapted to Virginia’s climate.
The pickling revolution. In 1824, Mary Randolph — a Jefferson relative by marriage — published The Virginia House-Wife, the first true American regional cookbook. Fifty of its pages are devoted to pickles and catsups: walnut catsup, pickled peaches, pickled nasturtium buds. It wasn’t a book about dainty entertaining; it was a survival manual for turning summer surplus into a winter’s food supply. Randolph thanked unnamed people who “aided” her — many of the techniques she recorded originated with enslaved women preserving food using methods carried from West and Central Africa.
The chef who built the system. In 1784, Jefferson brought a 19-year-old enslaved man named James Hemings — Sally Hemings’ older brother — to Paris to train as a chef. For five years, Hemings apprenticed in the finest kitchens in France, learning the mother sauces and pastry techniques that defined haute cuisine. He returned to Monticello still enslaved, and it was Hemings who knew what to do with all that ice: he made the ice cream Jefferson became famous for serving, introduced macaroni and cheese to the American table, and prepared meringue-and-custard desserts for Jefferson’s dinner parties. Jefferson freed him in 1796, after Hemings trained his younger brother to take his place. Hemings died five years later, at 36.
Today we talk about food preservation as a hobby — canning jam, smoking a weekend brisket, a CSA box. In Jefferson’s Virginia, it was infrastructure. It decided who ate and who starved, and it was built by people whose names history mostly didn’t bother to record. Below is the dish at the center of it all: the actual ice cream recipe, in Jefferson’s own hand.
Jefferson’s Original Recipe (Historical Text, c. 1780s)
This recipe survives in Jefferson’s own handwriting and is held at the Library of Congress. It reflects the French technique James Hemings would have learned in Paris:
2 bottles of good cream — 6 yolks of eggs — 1/2 lb. sugar. Mix the yolks and sugar. Put the cream on a fire in a casserole, first putting in a stick of vanilla. When near boiling, take it off and pour it gently into the mixture of eggs and sugar. Stir it well. Put it on the fire again, stirring it thoroughly with a spoon to prevent it sticking to the casserole. When near boiling, take it off and strain it through a towel. Put it in the sabotière, then set it in ice an hour before serving. Put a handful of salt into the ice, and salt on the lid of the sabotière, and cover the whole with ice. Turn the sabotière in the ice, opening occasionally to scrape the frozen mixture from the sides with a spatula, until it is well taken (frozen through). Pack it into molds, pressing down firmly, and return the mold to the ice bucket until the moment of serving. To unmold, dip briefly in warm water and turn out onto a plate.
(A sabotière was a hand-cranked French ice cream churn — a small metal canister that sat inside a bucket of salted ice.)
Modern Adapted Recipe: Jefferson’s Vanilla Ice Cream
Yields: about 1 quart | Active time: 30 min | Freeze time: 4+ hrs (or ~25 min in an ice cream maker)
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 6 large egg yolks
- ½ cup sugar
- 1 vanilla bean, split (or 2 tsp vanilla extract)
- Pinch of salt
Directions
- Split the vanilla bean and scrape the seeds into the cream and milk in a saucepan. Add the pod too. Heat gently until just below a simmer, then remove from heat and let steep for 10 minutes.
- Whisk egg yolks and sugar together until pale.
- Slowly pour the warm cream into the yolk mixture, whisking constantly (this tempers the eggs so they don’t scramble).
- Return everything to the pan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (about 5–8 minutes). Do not let it boil.
- Strain through a fine sieve into a bowl set over ice. Remove the vanilla pod. Stir in the salt and cool completely.
- Churn in an ice cream maker according to the manufacturer’s instructions, or pour into a shallow dish and freeze, stirring every 30 minutes for the first 2–3 hours to break up ice crystals.
- Freeze until firm, about 4 hours total.
